My mother in-law from Vasto makes the pickled eggplant as follows .
slice the egg plant , sprinkle with plenty of cooking salt , leave to sweat for 4 hours .
Rince the egg plant under running water , pat dry .
Slice the egg plant into thin ribbons .
Place in a glass bowl or jar , cover with vinegar leave for 24 hours in the vinegar .
Remove from the vinegar and squeeze dry .
Place the egg plant into a clean glass jar , with spices of your choice eg' hot peppers, oregano, garlic.
After one week of marinating in the oil and spices , they will be ready to eat ,Buon Appetito.

tip : make sure the egg plant are always covered by the oil .You can use the same recipe to pickle a variety of hard vegatables eg: carrot cauliflower , new guinea bean . Green tomato's , the tomato's are my favourite , if pickling tomato's don't mix with other vegatables add oregano and garlic .
