I know a few cardarelli's but the problem is that many family trees have broken along the way. If I were you I would suggest to contact il Comune di San Donato (the town's hall) I can get you the # if you'd like) and speak w/one of the workers there. Also my parents know about 98% of the town and if they are not familiar w/you I am sure that they know someone related to you. My father has a mechanic shop in Newton my mom work in brighton. if you are interested i can explain the situation and see if they might know anything and/or arrange for you to meet with one of them so you can discuss your focus. I've much time there over these years and i can not recall many Sachetti's residing in San Donato as a matter of fact it is a last name seldom heard of. I agree w/carla (whom i've know throughout the years) that if you are aware of a surname you might get further. And if you ever get a chance go to san donato b/c it is beautifl place almost gothic.
